  10. 80 degrees for 45 mins then flip.

  12. Once cool grate over fresh pasta, salads for amazing flavour.

Ok, strictly speaking, this is not a meat recipe. And usually I am all about meat recipes. Cured egg yolks add an umami, cheese-like flavor to dishes, much like grated parmesan cheese. And the best part is that the carbon footprint of making a cured yolk is much less than making parmesan. This salt-cured egg yolk is absolutely delicious as a dairy-free Parmesan substitute.
