- Finely dice onion, fry in vegetable oil with salt on a low heat until caramelised, 20 minutes approximately.
- Using a microplane grater, grate up the gherkins and add to a mixing bowl.
- Add the rest of the ingredients to the bowl, whisk together and add the cooked onions to the mix still warm and stir in well. Add pepper to taste.
