  1. Chop the strawberries into quarters and add to a pan..
  2. Juice a lemon and add 2 teaspoons to the pan (I used the rest as part of a salad dressing so not to waste the rest)..
  3. Add the sugar to the pan..
  4. Heat the pan on a medium heat and bring to a simmer (bubbles will start to form). This only took 1-2 mins..
  5. Reduce the heat to the lowest possible and continue to cook for 10 mins, stirring every 2 mins or so..
  6. Once the strawberries are nice and soft, use the back of a spoon to mulch them down. Continue to do this for 3-5 mins, until the consistency of the coulis is as thick as you like it..
  7. Remove from the heat. If you want a completely smooth coulis you can sieve it (using a metal sieve so it doesn’t melt). I’ve left mine with some chunks in it. Once cooled, leave in an airtight container - it will easily last for 5 days. It can also be frozen. Enjoy!.

Circle with the coulis and garnish with mint. Remove from the bags and serve liquid on it's own or puree to create a coulis. Bring water and sugar to the boil, stirring to make sure the sugar has dissolved. Add the strawberries and cook until soft. For a smoother coulis, run mixture through blender, then a sieve.
