- It's 50 g of Butter.
- Prepare 300 g of Button Mushrooms cut in half.
- You need 1 of large Onion diced.
- It's 100 g of Stilton Cheese.
- You need 1 of Garlic Clove crushed.
- It's 1 of Bay leaf.
- You need 1 tbls of fresh Parsley.
- Prepare 100 g of Veg stock.
- Prepare 200 g of White Wine.
- You need 3 tbls of Double cream.

- Ingredients.
- Add half the butter to a saucepan heat up then add the onions and garlic 2/3 of the mushrooms, veg stock and the bay leaf. Stir and cover and simmer for 20 minutes stirring often the onions should be soft a not browned.
- Add the other half of the butter and chopped mushrooms to a frying pan and cook the mushrooms slightly browned 5 minutes..
- Next add the Stilton cheese cut up and the parsley stir until the cheese has melted then take off let cool a little. Then add the wine and the cream stir in and set to one side..
- In the saucepan take out the bay leaf and pour it into a blender and blend for 2 minutes until thick..
- Pour the blended mushrooms back into the saucepan and add the mushroom and Stilton to it stir bring to the boil and simmer for 2 minutes..
- Serve with a nice crusty bread..
