- Heat up a wok over a high heat. Add around 1 1/2 tbsp oil and add the onion. Fry whilst stirring for around 2-3 minutes until it starts to soften..
- Add in the pork, fry quickly and stir through with the onion for around 1-2 mins until warmed through..
- Scrape the onion and pork to the side of the wok and on the bare side add the beaten eggs. Allow to sit for a minute until it just begins to set then quickly using a spatula scramble it up into small pieces..
- Add in the rice, combine everything together. Add the oyster sauce and drizzle over the light soy sauce. Stir then give everything a good toss together..
