Wings three ways: Classic BBQ Sirracha chilli Saffron & truffle. Sauce and toss your wood-fired wings in some ridiculous flavor. These wings have a little bit of everything. I cooked it as noted but added one finely diced. Using kitchen shears or a sharp knife, separate the chicken wings into the drummettes and wings, discarding the wing tip joint. Tex's Hoi Sin & Cola BBQ Chicken Wings πŸ—πŸ’πŸΆ step by step

  1. Mix together all the thick ingredients in a suitably-sized ovenproof dish. Stir well.
  2. Add the thin ingredients, and stir well again. I'm using Cherry Coke™ in my marinade.
  3. Place the chicken in the oven dish. Turn the wings until nicely coated in the sauce and allow to marinate for at least 1 hour, preferably overnight.
  4. Preheat the oven to gas mark 7, 220°C (425°F) when ready to cook.
  5. Stir the wings in the sauce again. Put in the oven for 50-60 minutes, stirring every 10-15 minutes.
  6. If the marinade doesn't become as sticky as you'd like, strain it off into a pan and reduce until it is sticky. Pour back over the chicken and pop back in to the oven for 5-10 more minutes.
  7. Check the chicken to see if it's done (juices run clear when pierced with a skewer).
  8. Finally, remove from the oven, plate up, and drizzle with the sauce from the oven dish. Garnish with herbs, sesame seeds, or matchsticks of cucumber and/or spring onion.
  9. Dig in and get messy.
